Ingredients:
- 1-1/2 lbs red potatoes
- 1/2 tsp italian seasoning
- 1 tsp garlic salt
- 3 Tbsp butter – cold – sliced into 10 pieces
- 1/2 C pizza sauce
- 2 C mozzarella or italian 6 blend cheese – shredded
Optional: (*see Notes below)
- mini pepperoni or pepperoni slices cut into quarters
- cooked (not raw) italian sausage crumbles
- ham – diced
- pineapple chunks – diced
- sliced mushrooms – cut into small pieces
- sliced black olives
- minced onion
Directions:
- Dice potatoes into 1/2″ – 3/4″ pieces
- Place them into a shallow microwaveable bowl or plate – I use a glass 9″ pie plate
- Place sliced butter pieces randomly on top of potatoes
- Sprinkle italian seasoning and garlic salt on top
- Cover plate with microwave-safe plastic wrap (I use Press-n-Seal) and poke a couple of holes in it
- Place in the microwave and cook on high for 5 minutes
- Remove potatoes from the microwave and carefully remove the plastic wrap – be careful – there will be hot steam!
- Stir the potatoes well
- If using, add in meat ingredients (not vegetables) and stir well
- Re-cover and place in microwave and cook on high for 3 minutes
- Test the potatoes to ensure they are fork tender – if not, pop them back into the microwave for an additional 1 – 2 minutes
- Stir in pizza sauce (and if using, any vegetable ingredients) with the cooked potatoes
- Top with shredded cheese
- Put the plate (uncovered) into the microwave and cook on high for about 2 – 3 minutes – or until cheese is completely melted
Notes:
- If using any optional ingredients, make sure that they are small pieces, as they will only be in the microwave for a short amount of time
