Ingredients:

  • 3 C frozen shredded hash brown potatoes – thawed
  • 1/4 C (1/2 stick) butter – melted – divided
  • 1 C cheddar or pepper jack cheese – shredded
  • 1 C swiss or monterey jack cheese – shredded
  • 1 C ham – diced
  • 1/4 C onion – chopped
  • 4 eggs
  • 2 egg whites
  • 1/2 C milk
  • salt & pepper – to taste

Directions:

  1. Preheat oven to 425 degrees
  2. Press hash browns between paper towels to remove excess moisture
  3. Grease a 9-inch pie plate with 2 Tbsp butter
  4. Press hash browns onto the bottom and up the sides of pie plate
  5. Drizzle with remaining melted butter
  6. Bake, uncovered, for 20-25 minutes or until edges are browned
  7. Combine cheeses, ham (if the ham has moisture, press the ham between two paper towels) and onion
  8. Spoon into the crust
  9. In a bowl, beat the eggs & milk, salt & pepper until fluffy – about 5 minutes
  10. Pour over ham
  11. Reduce oven to 350 degrees
  12. Bake, uncovered, for 45 – 55 minutes or until golden brown – it’s done when a knife is inserted near the center and comes out clean
  13. Let stand 10 minutes before cutting
