Ingredients:
- 4 boneless, skinless chicken breasts
- 1 Tbsp butter – melted
- 1 tsp salt
- 1/2 tsp pepper
- 2/3 C peach preserves
- 1 Tbsp spicy brown mustard
- 1 tsp balsamic vinegar
- pinch dried thyme
Directions:
- Preheat oven to 350 degrees
- Lightly grease a 13″ x 9″ x 2″ baking pan with non-stick cooking spray
- Rinse chicken and pat dry with paper towels
- Pound chicken between 2 sheets of saran wrap to even out thickness
- Place the chicken in the prepared baking pan
- Brush chicken with a little melted butter and sprinkle with salt and pepper
- Bake for 10 minutes
- Meanwhile, in a small bowl, whisk together preserves, mustard, vinegar and thyme
- Coat chicken thoroughly with the glaze
- Bake for 10 – 15 minutes longer, or until golden brown and cooked through – the juices should run clear when pierced with a fork
