Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 Tbsp butter – melted
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2/3 C peach preserves
  • 1 Tbsp spicy brown mustard
  • 1 tsp balsamic vinegar
  • pinch dried thyme

Directions:

  1. Preheat oven to 350 degrees
  2. Lightly grease a 13″ x 9″ x 2″ baking pan with non-stick cooking spray
  3. Rinse chicken and pat dry with paper towels
  4. Pound chicken between 2 sheets of saran wrap to even out thickness
  5. Place the chicken in the prepared baking pan
  6. Brush chicken with a little melted butter and sprinkle with salt and pepper
  7. Bake for 10 minutes
  8. Meanwhile, in a small bowl, whisk together preserves, mustard, vinegar and thyme
  9. Coat chicken thoroughly with the glaze
  10. Bake for 10 – 15 minutes longer, or until golden brown and cooked through – the juices should run clear when pierced with a fork
