Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/4 C water
  • 1 can diced tomatoes with chiles, drained
  • 1 can nacho cheese soup (Cambell’s makes a good one)
  • 1/4 C sour cream
  • 1 C grated cheddar cheese
  • 12 count – 8″ soft tortillas – flour or corn
  • guacamole, salsa and sour cream for topping – as desired

Directions:

  1. Preheat oven to 350 degrees
  2. Spray a 9″ square baking dish with non-stick spray
  3. In a large skillet, cook the beef over medium heat and crumble as it cooks
  4. Drain grease
  5. Add the taco seasoning and water to the skillet and cook for 2 minutes
  6. In a large bowl, mix the tomatoes, cheese soup, and sour cream until well combined
  7. Stir in the cooked meat
  8. Place 3 tortillas in the bottom of the prepared baking dish
  9. Top with 1/3 of the meat mixture
  10. Repeat layers, ending with a layer of tortillas on the top
  11. Sprinkle grated cheese over the top
  12. Bake for 20 minutes or until hot and melty

Notes:

  1. Serve topped with guacamole, salsa and extra sour cream – as desired
