Ingredients:

  • 1-1/2 C sugar – divided into 1-1/4 C & 1/4 C
  • 1-1/2 tsp cinnamon – divided into 1 tsp & 1/2 tsp
  • 2-1/4 C flour
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2/3 C (1-1/3 sticks or a little shy of 11 Tbsp) butter – softened to room temperature
  • 1 tsp vanilla
  • 2 eggs – beaten
  • 1 C (approx 2 large) bananas – mashed well
Directions:
  1. In a small bowl, combine 1/4 C sugar and 1 tsp cinnamon – set aside
  2. In medium bowl, combine flour, baking powder, baking soda, salt and 1/2 tsp of cinnamon – set aside
  3. In a large bowl, use a mixer to cream 1-1/4 C sugar, butter and vanilla until light and fluffy
  4. Add eggs and beat well
  5. Stir in banana
  6. While beating, slowly mix dry ingredients into wet
  7. Refrigerate dough for 30 minutes
  8. Preheat oven to 400 degrees
  9. Lightly grease cookie sheets with non-stick cooking spray
  10. Drop tsp-sized balls of dough 2″ apart on greased cookie sheets
  11. Sprinkle with cinnamon/sugar mixture
  12. Bake 8 – 10 minutes or until lightly browned
  13. Remove from oven and allow to cool for 2 minutes before transferring cookies to cooling racks
