  • C Mexican Blend Cheese – shredded
  • 2 C Queso Quesadilla Cheese – shredded & divided into (2) 1 C portions (*See Note Below)
  • tortilla chips – for serving

Directions:

  1. Preheat oven to 350 degrees
  2. In a large bowl, mix together the ranch seasoning mix and enchilada sauce
  3. Whisk until no clumps remain
  4. Stir in the chicken, green chiles, 1 C Mexican Blend Cheese and 1C Queso Quesadilla Cheese
  5. Carefully mix until well combined
  6. Pour mixture evenly into a 13″ x 9″ x 2″ baking dish
  7. Sprinkle remaining 1 C Queso Quesadilla Cheese evenly over the top
  8. Bake for 20 – 25 minutes until cheese is melted and bubbly around the edges

Notes:

  1. If you can’t find Queso Quesadilla Cheese, you can substitute all 3 C with Mexican Blend Cheese
