• 4 boneless, skinless chicken breasts (or 8 “thin sliced” chicken breasts)
  • 1 packet (or 3 Tbsp bulk) dry ranch dressing mix
  • 3/4 C panko bread crumbs
  • 3/4 C parmesan cheese
  • 1/2 C (1 stick) butter


  1. Preheat oven to 350 degrees
  2. Line a 13″ x 9″ x 2″ baking pan with foil and then spray the foil with non-stick cooking spray (this makes for easy clean-up!)
  3. In a medium bowl, mix ranch packet, bread crumbs & parmesan cheese – set aside
  4. Rinse the chicken and use a paper towel to pat chicken dry
  5. Cut each chicken breast in half, the long way – if using 8 “thin sliced” chicken breasts, do not cut them
  6. In a medium bowl, melt the butter in the microwave on high for 1 minute, or until melted
  7. Dip each piece of chicken into melted butter – cover both sides
  8. Then press each side of the chicken into the breading mix
  9. Place in prepared baking pan
  10. Bake for 45 minutes
