Ingredients:

*Be sure to thaw your corn an hour or so prior to starting the recipe

  • 1 C flour
  • 2 tsp baking powder
  • 2 tsp sugar
  • 1/2 tsp salt
  • 2/3 C milk
  • 1 egg – betaen
  • 2 Tbsp butter – melted
  • 2 C frozen corn – thawed – do not use canned corn or the fritters will be too mushy
  • 2 Tbsp oil – divided
  • maple syrup – warm

Directions:

  1. In large bowl mix together flour, baking powder, sugar, salt, milk, egg and butter
  2. Fold in corn
  3. In large skillet over medium high heat 1 Tbsp oil until sizzling
  4. Drop spoonfuls of batter into skillet to make 4 fritters
  5. Brown on both sides, remove and drain on paper towels
  6. Add another tablespoon of oil for second batch (repeat steps 4 & 5 above)

Notes:

  1. Serve immediately with warm maple syrup – they do not taste good when they are cold
  2. Makes 8 Fritters
