Ingredients:

  • 5 cans (15 oz each) pork and beans
  • 1 large onion – chopped
  • 2 Tbsp butter
  • 1/2 C molasses
  • 1/3 C bbq sauce (I use Sweet Baby Ray’s Brand)
  • 4 Tbsp spicy mustard – or dijon
  • 1 C ketchup
  • 3/4 C brown sugar – firmly packed
  • 1 tsp pepper
  • 10 slices uncooked thick bacon, cut in 2″ – 3″ pieces – make sure to use thick bacon

Directions:

  1. Preheat oven to 325 degrees
  2. In a medium skillet, saute onions over medium/high heat in the butter until onions are nice and soft
  3. In a large mixing bowl, add the beans, cooked onions, molasses, bbq sauce, mustard, ketchup. brown sugar and pepper
  4. Pour in a 9×13 baking dish
  5. Top with the thick uncooked bacon slices in single layers along the top
  6. Bake for 90 minutes or until the top is dark and has caramelized nicely
