Ingredients:

  • 1-1/2 lbs boneless, skinless chicken thighs – cut into chunks
  • 12 oz smoked andouille sausage – cut into 1″ pieces
  • 1 medium onion – chopped
  • 3/4 C chicken broth (or water)
  • 1 can (14.5 oz) diced tomatoes – undrained
  • 1 can (6 oz) tomato paste
  • 2 tsp cajun or creole seasoning
  • dash cayenne pepper – to taste (be careful, a little goes a long way)
  • 1 bell pepper – any color – chopped
  • dash salt and pepper – to taste

Directions:

  1. Place a slow cooker liner bag in your crockpot (*see Notes below)
  2. Directly in your crockpot, combine the chicken chunks, sausage pieces, chopped onion, broth or water, tomatoes (with their juices), tomato paste, creole seasoning and cayenne pepper
  3. Cover and cook on low for 6 hours
  4. Add the chopped bell pepper
  5. Continue to cook on low for another hour
  6. Taste and add salt and pepper, as needed

Notes:

  1. For easy clean up, I always use a slow cooker liner bag – make sure if you use a slow cooker liner bag, that you buy the specific liner bag that is made for Slow Cookers, DO NOT use anything else or it will melt and ruin your food!
  2. Caution:  this dish can get spicy, quick – especially as it cooks – so adjust your seasonings accordingly, you can always add more – if it is too spicy, add some sugar – this will help reduce the amount of heat, but be careful, you do not want a sweet tasting dish
  3. Serve over cooked rice or pasta 
  4. Serves 6
