Ingredients:
- 5 cans (15 oz each) pork and beans
- 1 large onion – chopped
- 2 Tbsp butter
- 1/2 C molasses
- 1/3 C bbq sauce (I use Sweet Baby Ray’s Brand)
- 4 Tbsp spicy mustard – or dijon
- 1 C ketchup
- 3/4 C brown sugar – firmly packed
- 1 tsp pepper
- 10 slices uncooked thick bacon, cut in 2″ – 3″ pieces – make sure to use thick bacon
Directions:
- Preheat oven to 325 degrees
- In a medium skillet, saute onions over medium/high heat in the butter until onions are nice and soft
- In a large mixing bowl, add the beans, cooked onions, molasses, bbq sauce, mustard, ketchup. brown sugar and pepper
- Pour in a 9×13 baking dish
- Top with the thick uncooked bacon slices in single layers along the top
- Bake for 90 minutes or until the top is dark and has caramelized nicely
