Ingredients:
- 1 large (approx 6-1/2 lb) pork shoulder – bone-in
- 16 whole cloves garlic – peeled
- Rub: 3/4 C Pappy’s Brand Seasoning and 8 oz jar Pesto ~ OR ~ garlic powder, pepper, season salt, onion powder & a little olive oil
Directions:
- Make 16 slits into the fatty side of the pork with a sharp knife and stuff each slit with a garlic clove
- Mix your rub together and generously cover entire pork shoulder (top/bottom/sides)
- Place seasoned meat in the refrigerator overnight to marinate
- Let stand at room temperature for 30 minutes before cooking
- Preheat oven to 450 degrees
- Place pork in a roasting pan (fat side up), cover tightly with foil and place in the oven
- Immediately drop temperature to 300 degrees and roast for 4-1/2 hours
- Remove foil and turn temperature back up to 450 degrees and let brown (approx 45 minutes)
Notes:
- If using pork tenderloin, season & cook the same way, but adjust the cooking times to 2 hours covered and 30 minutes uncovered
- Serve over creamy, cheesy polenta – YUMMMMMY!!!
