Ingredients:
- 1 unbaked 9″ pie shell
- 4 eggs
- 2-1/4 C milk
- 2/3 C sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
- ground nutmeg
Directions:
- Preheat oven to 400 degrees
- Bake pie shell for 5 minutes (do not prick crust with a fork)
- Cool on a wire rack
- In a mixing bowl, beat eggs
- Add milk, sugar, vanilla & salt – blend well
- Pour filling into baked pie shell
- Sprinkle with nutmeg (as little or as much as you like)
- Bake at 400 degrees for 15 minutes
- Reduce oven temperature to 325 degrees
- Bake for 35-40 minutes or until a knife inserted one inch from center comes out clean – Do not over bake!
- Cool on wire rack
