Ingredients:
- 1 lb pasta – use a shape, not a long noodle
- 15 oz container of ricotta cheese (Polly-O Brand is the best, if you can find it)
- 1/2 C (1 stick) butter
- 3/4 C whole milk or half & half
- 1/2 C parmesan cheese – freshly grated
- 1/4 C fresh basil – snipped
Directions:
- Prepare the pasta according to package directions – drain well
- Return pasta to pot and add the ricotta cheese, butter and milk (or half & half)
- Cook over low heat, stirring until the butter melts
- Remove from heat
- Stir in the parmesan cheese
- Garnish with fresh basil
Notes:
- If desired, serve with grilled chicken on the side or 1 lb. cooked, crumbled italian sausage mixed in
