Ingredients:
- 4 cans (16 oz each) refried beans
- 8 oz cream cheese – softened to room temperature
- 1-1/3 C sour cream
- 2 pkg taco seasoning
- 1/2 C salsa
- 2 C shredded ‘Mexican Blend’ or ‘Queso Quesadilla’ cheese – divided
Directions:
- Preheat oven to 350 degrees
- In a large bowl, mash together the refried beans and softened cream cheese
- Stir in the sour cream, taco seasoning, salsa, and 1/2 C shredded Mexican cheese – mix well
- Pour mixture into a 13″ x 9″ x 2″ casserole dish
- Sprinkle the remaining 1-1/2 C shredded cheese evenly on top
- Bake for 30 minutes or until cheese is melted and bubbly
Notes:
- You can easily cut this recipe in half, just use an 8″ or 9″ square baking dish
