Ingredients:
- 2 rotisserie chicken breasts – no skin
- 2 C white cheddar cheese – shredded
- 1-1/4 C parmesan cheese – shredded – divided
- 8 oz cream cheese – softened to room temperature
- 1-1/2 C caesar salad dressing – divided
- 2 Tbsp green onions – chopped – for garnish
Directions:
- Preheat oven to 350 degrees
- Grease an 8″ square baking dish with non-stick cooking spray – set aside
- Shred the chicken into tiny pieces and place onto the bottom of the baking dish
- Top with 1/2 C caesar salad dressing – the salad dressing won’t cover the chicken entirely, so just scoop it over the chicken
- In a large mixing bowl, using an electric mixer, beat white cheddar cheese, 1 C parmesan cheese, cream cheese and remaining 1 C of salad dressing until well combined
- Top the chicken with the cheese mixture – leveling it out on top
- Bake for 25 – 30 minutes, until the top is golden brown and bubbly – after 25 minutes of baking, you can turn on the broiler fora few minutes, for a crispier top – watch carefully not to burn the cheese!
- Top with the remaining 1/4 C parmesan cheese and chopped green onions
- Serve immediately
