Ingredients:

1 pkg (or 3 Tbsp bulk) dry ranch seasoning mix

1 can (10 oz) red enchilada sauce – I recommend ‘La Victoria’ Brand

3 C shredded cooked chicken

1 can (4.5 oz) diced green chiles – drained

1 C Mexican Blend Cheese – shredded

2 C Queso Quesadilla Cheese – shredded & divided into (2) 1 C portions (*See Note Below)

tortilla chips – for serving
Directions:
- Preheat oven to 350 degrees
- In a large bowl, mix together the ranch seasoning mix and enchilada sauce
- Whisk until no clumps remain
- Stir in the chicken, green chiles, 1 C Mexican Blend Cheese and 1C Queso Quesadilla Cheese
- Carefully mix until well combined
- Pour mixture evenly into a 13″ x 9″ x 2″ baking dish
- Sprinkle remaining 1 C Queso Quesadilla Cheese evenly over the top
- Bake for 20 – 25 minutes until cheese is melted and bubbly around the edges
Notes:
- If you can’t find Queso Quesadilla Cheese, you can substitute all 3 C with Mexican Blend Cheese
- Serve with your favorite tortilla chips for scooping
