Ingredients:
- 2 lb ground beef
- 1 onion – chopped
- 2 C beef broth
- 1 qt tomato juice
- 4 medium potatoes – diced (you can peel them if you prefer, but leaving the skin on is good too)
- 1 can green beans
- 1 can corn
- 1 can peas
- 1 can sliced carrots
- salt & pepper to taste
Directions:
- Place a slow cooker liner bag in your crockpot *(see Notes below)
- Drain all of the juice out of the canned vegetables and set aside
- In a skillet, cook ground beef with onion until browned and season with salt and pepper
- Place cooked ground beef mixture and remaining ingredients in a large slow cooker
- Cook on high for 2 – 3 hours OR low for 4 – 6 hours – until potatoes are fork-tender
Notes:
- For easy clean up, I always use a slow cooker liner bag – make sure if you use a slow cooker liner bag, that you buy the specific liner bag that is made for Slow Cookers, DO NOT use anything else or it will melt and ruin your food!
