Ingredients:

  • 2 lbs beef stew meat – cut into bite-sized pieces
  • 2 celery ribs – sliced
  • 2 C baby carrots
  • 1 medium onion – finely chopped
  • 5 small red potatoes – cut into bite-sized pieces (about 3 C)
  • 1 tsp salt
  • 1 tsp pepper
  • 3 cloves garlic – minced
  • 1 Tbsp dried parsley flakes
  • 1 tsp dried oregano leaves
  • 2 Tbsp worcestershire sauce
  • 32 oz beef broth
  • 6 oz can tomato paste
  • 1/2 C flour
  • 1/2 C water
  • 2 C (16 oz) frozen corn (*see Notes below)

Directions:

  1. Place a slow cooker liner bag in your crockpot (*see Notes below)
  2. In a very large bowl, combine beef, celery, carrots, onion, potatoes, salt, pepper, garlic, parsley and oregano – mix well
  3. Place into crockpot
  4. In the same bowl, now empty, stir together worcestershire sauce, beef broth and tomato paste until tomato paste is mostly dissolved 
  5. Pour over meat & veggie mixture in the crockpot and use your hands to mix it up well
  6. Cover and cook on high for 6 – 7 hours 
  7. After 6 hours, test meat to ensure it is tender – if not, cook for another hour
  8. After the meat is tender, mix together the flour and water in a small dish until well combined and pour into the crockpot
  9. Stir well  – this will add a nice thickness to the stew
  10. Stir in frozen corn
  11. Continue cooking on high, covered for additional 1 hour

Notes:

  1. For easy clean up, I always use a slow cooker liner bag – make sure if you use a slow cooker liner bag, that you buy the specific liner bag that is made for Slow Cookers, DO NOT use anything else or it will melt and ruin your food!
  2. You may substitute 2 C frozen corn for 1 C frozen corn & 1 C frozen peas 
  3. This recipe does not require you to cook the meat first, that’s why I love it so much!  Well, and the fact that is soooooo yummy!
