Ingredients:
- 5 C flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp cream of tartar
- 1 C sugar
- 1 C (2 sticks) butter – softened to room temperature
- 2 tsp vanilla
- 1 C powdered sugar
- 1 C vegetable oil
- 2 eggs
- red and green colored sugar crystals – for topping
Directions:
- Preheat oven to 350 degrees
- In a medium bowl, sift together flour, salt, baking soda and cream of tartar – set aside
- In a large bowl, using an electric mixer, or by hand if you’re strong, cream sugar, butter and vanilla
- Add powdered sugar, oil and eggs – beat until well combined
- In a medium bowl, sift together flour, salt, baking soda and cream of tartar
- Slowly add a cup at a time of dry mixture to wet mixture, stirring after each cup is added – just until combined – do not overmix
- Form rounded teaspoonfuls into balls and place on ungreased cookie sheets
- Using a moistened paper towel wet the bottom of a glass, dip in colored sugar (re-dipping for each cookie) and flatten ball of dough – you may need to apply the moistened paper towel every so often, to keep glass wet and easily able to pick up sugar crystals
- Bake for 10 – 13 minutes or until edges turn slightly brown – check often, you do not want burnt cookies
- Remove from oven and immediately transfer to cool on wire racks
