Ingredients:
- 4-1/2 C chicken broth
- 1 tsp salt
- 1-1/2 C grits
- 2 C diced boneless ham
- 2 C cheddar cheese – shredded
- 1 C whole milk
- 1 C frozen corn kernels – thawed
- 1 tsp onion powder
- 3/4 tsp garlic powder
- 1/4 tsp black pepper
- 4 eggs – lightly beaten
Directions:
- Preheat oven to 350 degrees
- Lightly spray a 13″ x 9″ x 2″ baking dish with non-stick cooking spray
- In a large pot, over medium-high heat, bring chicken broth to a boil
- Whisk in grits
- Bring back to a boil
- Reduce heat to medium-low and simmer 15 – 20 minutes, whisking occasionally
- Remove grits from heat
- Stir in cheese until melted
- Stir in the ham, milk, corn, onion powder, garlic powder, pepper and eggs
- Pour into prepared pan
- Bake uncovered for 50 – 60 minutes
- Let stand 10 – 15 minutes before serving
