*This recipe requires a mini muffin pan
Ingredients:
For the Mini Muffins:
- 3/4 C sugar
- 1 stick (1/2 C) butter – melted
- 1/2 tsp vanilla extract
- 3/4 C milk
- 1-1/2 C flour
- pinch of ground nutmeg
- 1/4 tsp ground cinnamon
- 1/8 tsp cream of tartar
- 1-1/2 tsp baking powder
For the Topping/Coating:
- 1 stick (1/2 C) butter – melted
- 1/2 C sugar
- 1-1/2 tsp ground cinnamon
Directions:
- Preheat oven to 350 degrees
- Spray mini muffin tin with non-stick spray
- In a large bowl, mix melted butter, sugar and vanilla – mix until smooth
- Pour in milk and set aside – DO NOT MIX
- In a medium size bowl, mix the remaining dry ingredients (flour, baking powder, cinnamon, cream of tartar and nutmeg)
- Pour your dry ingredients over the butter/sugar/vanilla/milk mixture
- Mix until just blended
- Using a spoon or a scooper, fill each muffin 3/4 full
- Place in oven on middle rack and bake 18-20 minutes, until lightly golden brown
- Remove from oven
- Make the topping/coating by melting the butter in a small bowl
- In another small bowl, mix the sugar and cinnamon together
- Take each donut muffin, while they are still warm (but not too hot) and dip them completely in melted butter and roll them in cinnamon sugar mixture
- Place on wax paper to cool
- Serve warm or at room temperature
