Ingredients:
- 1 lb ground beef
- 1 packet taco seasoning
- 1/4 C water
- 1 can diced tomatoes with chiles, drained
- 1 can nacho cheese soup (Cambell’s makes a good one)
- 1/4 C sour cream
- 1 C grated cheddar cheese
- 12 count – 8″ soft tortillas – flour or corn
- guacamole, salsa and sour cream for topping – as desired
Directions:
- Preheat oven to 350 degrees
- Spray a 9″ square baking dish with non-stick spray
- In a large skillet, cook the beef over medium heat and crumble as it cooks
- Drain grease
- Add the taco seasoning and water to the skillet and cook for 2 minutes
- In a large bowl, mix the tomatoes, cheese soup, and sour cream until well combined
- Stir in the cooked meat
- Place 3 tortillas in the bottom of the prepared baking dish
- Top with 1/3 of the meat mixture
- Repeat layers, ending with a layer of tortillas on the top
- Sprinkle grated cheese over the top
- Bake for 20 minutes or until hot and melty

- Serve topped with guacamole, salsa and extra sour cream – as desired
