Ingredients:
- 1 lb ground beef
- 1 packet (1 oz) dry taco seasoning mix – I use Lawry’s brand
- 1/4 C water
- 8 flour tortillas – 6″ size
- 1 can (16 oz) refried beans – I use Rosarita brand – Traditional
- 1 bottle (15 oz) red taco sauce – I use La Victoria brand – mild
- 1-1/2 C mexican style cheese – finely shredded
- 1-1/2 C queso quesadilla cheese – finely shredded
- 1 large tomato – diced
- 1 can sliced olives
- 1/2 C vegetable oil
- green onions – sliced
Directions:
- Preheat oven to 400 degrees
- In a large skillet, over medium heat, heat the oil
- Fry each tortilla in the oil just until lightly browned and crispy
- Remove and set aside to drain on paper towels
- Meanwhile, cook the ground beef in a large skillet over medium-high heat
- Drain grease
- Add taco seasoning and 1/2 C taco sauce
- Bring mixture to a boil
- Reduce heat to medium-low
- Stir and simmer for 10 minutes
- Remove from heat
- In a small pan on medium heat, warm the refried beans
- Place a single layer of beans on the crispy tortillas
- Place a single layer of taco meat on the beans
- Top with another flour tortilla
- Spread 3 Tbsp of taco sauce on the tortilla
- Sprinkle some of both cheeses on top
- Top with a few tomatoes and olives
- Bake for 10 – 12 minutes or until cheese is melted and bubbly
- Remove from oven let set for 5 minutes
- Top with green onions
- Slice into quarters
