Ingredients:
- 1 lb ground beef
- 1 C chopped onion
- 3/4 C salsa – thick & chunky
- 1 package taco seasoning mix
- 1/4 C water
- 1 C whole kernel corn
- 1 (2-1/4 oz) can sliced black olives, drained
- 1 pkg jiffy corn muffin mix (which you will need an egg & 1/3 C milk)
- 1 C shredded mild cheddar cheese
- 1 (4 oz) can diced green chiles
Directions:
- Preheat oven to 350 degrees
- Cook beef and onion until beef is browned
- Drain all of the grease
- Stir in salsa, taco seasoning and water
- Cook over low heat for 5-6 minutes or until mixture thickens
- Stir in corn and olives
- Spoon into an 8″ square baking dish
- Prepare batter for corn muffin mix according to package directions (except do not bake – you just want the batter)
- Add cheese and green chiles to the prepared corn muffin mix batter
- Spread over meat mixture
- Bake for 30-35 minutes until crust is golden brown
