Ingredients:
- 1-1/2 C sugar – divided into 1-1/4 C & 1/4 C
- 1-1/2 tsp cinnamon – divided into 1 tsp & 1/2 tsp
- 2-1/4 C flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 2/3 C (1-1/3 sticks or a little shy of 11 Tbsp) butter – softened to room temperature
- 1 tsp vanilla
- 2 eggs – beaten
- 1 C (approx 2 large) bananas – mashed well
Directions:
- In a small bowl, combine 1/4 C sugar and 1 tsp cinnamon – set aside
- In medium bowl, combine flour, baking powder, baking soda, salt and 1/2 tsp of cinnamon – set aside
- In a large bowl, use a mixer to cream 1-1/4 C sugar, butter and vanilla until light and fluffy
- Add eggs and beat well
- Stir in banana
- While beating, slowly mix dry ingredients into wet
- Refrigerate dough for 30 minutes
- Preheat oven to 400 degrees
- Lightly grease cookie sheets with non-stick cooking spray
- Drop tsp-sized balls of dough 2″ apart on greased cookie sheets
- Sprinkle with cinnamon/sugar mixture
- Bake 8 – 10 minutes or until lightly browned
- Remove from oven and allow to cool for 2 minutes before transferring cookies to cooling racks
