Ingredients:
- 7 oz greek yogurt
- 1/2 C flour
- 1 tsp baking powder
- 3/4 C butter – softened to room temperature
- 14 oz feta cheese – crumbled
- 2 eggs
- 7 oz roicotta cheese
- 1/2 C milk
- pinch of nutmeg
- pinch of pepper
Directions:
- Preheat oven to 350 degrees
- Grease an 11″ x 7″ x 2″ baking dish with olive oil – set aside
- In a large bowl, mix together flour and baking powder
- Whisk in the milk
- Add yogurt, eggs and butter – stir well – the mixture will be thick – don’t worry, if you keep stirring everything will combine
- Add ricotta cheese
- Using a large spoon, gently fold in feta cheese – don’t break the feta to very small bits
- Add nutmeg and pepper
- Pour the mixture into prepared baking dish
- Bake in the middle rack for 40 – 45 minutes, until golden brown – the pie is ready when inserted knife comes out clean
- Remove from the oven and let it cool before serving
