Ingredients:
- 4 boneless, skinless chicken breasts (or 8 “thin sliced” chicken breasts)
- 1 packet (or 3 Tbsp bulk) dry ranch dressing mix
- 3/4 C panko bread crumbs
- 3/4 C parmesan cheese
- 1/2 C (1 stick) butter
Directions:
- Preheat oven to 350 degrees
- Line a 13″ x 9″ x 2″ baking pan with foil and then spray the foil with non-stick cooking spray (this makes for easy clean-up!)
- In a medium bowl, mix ranch packet, bread crumbs & parmesan cheese – set aside
- Rinse the chicken and use a paper towel to pat chicken dry
- Cut each chicken breast in half, the long way – if using 8 “thin sliced” chicken breasts, do not cut them
- In a medium bowl, melt the butter in the microwave on high for 1 minute, or until melted
- Dip each piece of chicken into melted butter – cover both sides
- Then press each side of the chicken into the breading mix
- Place in prepared baking pan
- Bake for 45 minutes
