*This recipe requires a donut baking pan
Ingredients:
For the Donuts:
- 2 bananas – mashed
- 3 Tbsp sugar
- 1 egg
- 1/2 tsp vanilla extract
- 2 Tbsp vegetable oil
- 3/4 C flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/8 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/8 tsp salt
For the Chocolate Glaze:
- 1-1/2 C powdered sugar
- 1 Tbsp light karo corn syrup
- 1 tsp vanilla extract
- 3 Tbsp water
- 1/4 C + 2 Tbsp cocoa powder
Directions:
Make the Donuts:
- Preheat oven to 350 degrees
- Grease donut pan with non-stick cooking spray
- In a large bowl, whisk together the bananas, sugar, egg, vanilla and vegetable oil
- In separate bowl, mix together flour, baking powder, baking soda, cinnamon, nutmeg and salt
- Fold the dry ingredients into wet ingredients – mix until batter forms
- Transfer batter into a plastic baggie – snip corner
- Pipe batter into greased donut pan – filling each cavity to 3/4 full
- Bake for 10 minutes and let cool completely before removing from pan
Make the Chocolate Glaze:
- Using an electric mixer, beat together all of the ingredients until well combined – you may need extra water to adjust desired consistency
