Ingredients:
- 1/2 C (2 sticks) butter – room temperature
- 1 C sugar
- 1 egg
- 1-1/2 C flour
- 1-1/2 tsp baking soda
- 2 Tbsp cornstarch
- 1/2 tsp salt
- coarse sugar for sprinkling the top
Directions:
- Preheat oven to 350 degrees
- Line 2 cookie sheets with parchment paper
- In a large bowl, beat the butter and sugar until smooth
- Add in the egg and mix well
- Add in the flour, baking soda, cornstarch and salt
- Mix until well combined
- Scoop into balls, using a 1/3 C measuring cup – it should equal 6 even balls of dough
- Place 3 dough balls on each cookie sheet, leaving enough room for them to spread
- Slightly press down and sprinkle sugar on top
- Bake 12-15 minutes, or until lightly browned around the edges – watch them carefully, checking every minute or so after 12 minutes – do not over bake – they should be very soft when they come out of the oven, but they will set up as they cool
