Ingredients:
- 2-1/4 C flour – divided
- 1 C (2 sticks) butter – chilled and cut into small pieces + extra for pan
- 1/2 C powdered sugar + extra to sprinkle/garnish
- 1/4 C slivered almonds – finely ground
- 1 tsp grated lemon or lime peel
- dash of salt
- 1-1/2 C sugar
- 4 eggs
- 3/4 C fresh lemon or lime juice
- 1 tsp baking powder
Directions:
- Preheat oven to 350 degrees
- Butter 13″ x 9″ x 2″ pan
- Combine 2 C flour, 1/2 C powdered sugar, ground almonds, lemon or lime peel and salt in food processor and process until moist clumps form
- Press onto bottom of buttered pan
- Bake until edges are golden, about 20 minutes
- Whisk sugar, eggs, lemon or lime juice, baking powder and remaining 1/4 C flour in a large bowl until well blended
- Pour over hot crust
- Bake until topping is set and lightly golden, about 25 minutes
- Cool in pan on rack
- Sift additional powdered sugar over top
- Cut into squares
