Ingredients:
- 1 box French Vanilla w/ Pudding in the Cake Mix
- 1/3 C butter – melted
- 3 eggs – divided
- 18 oz jar of preserves/jam (any flavor)
- 16 oz cream cheese – softened to room temperature
- 1/2 C sugar
- 1 tsp vanilla
Directions:
- Preheat oven to 350 degrees and generously grease 13″ x 9″ x 2″ pan
- In a large bowl, combine cake mix, melted butter and 1 egg – mix with a fork or your hands until crumbly
- Gently spoon 1-1/2 C into measuring cup and set aside for topping – loosely not compacted
- Press remaining crumb mixture into bottom of greased pan
- Bake at 350 degrees for 7 minutes
- Spread preserves evenly over cooked crust
- In a medium bowl, beat cream cheese, sugar, vanilla and 2 eggs until smooth
- Spread evenly over preserves
- Sprinkle 1-1/2 C reserved crumb topping mixture over cream cheese mixture
- Bake at 350 degrees for 25 – 30 minutes or until topping is light golden brown
- Chill before serving
- Cut into squares and enjoy!
