Ingredients:
For the Crust:
- 1-1/4 C graham cracker crumbs
- 1/4 C sugar
- 5 Tbsp butter
For the Filling:
- 1/2 C cocoa
- 1/4 C cornstarch
- 3 egg yolks
- 1-1/2 C sugar
- 1/4 tsp salt
- 2 C milk
- 1 tsp vanilla extract
Directions:
Make the Crust:
- In a microwave safe bowl, melt the butter
- Add graham cracker crumbs & sugar
- Stir until well combined
- Press into a 9″ pie pan
Make the Filling:
- In a medium bowl, beat egg yolks
- Stir in cocoa, cornstarch, sugar, salt and vanilla until well combined
- In a heavy duty pot, over medium-high heat, add egg mixture
- Gradually add in milk – stirring constantly
- Cook until thick, beating it smooth
- Pour into pie crust
- Put in the fridge until set (about 2 hours) – serve cold
