Ingredients:
For the Crust:
- 1-1/4 C graham cracker crumbs
- 1/4 C sugar
- 5 Tbsp butter – melted
For the Filling:
- 1/3 C water
- 1/2 C (1 stick) butter
- 1 tsp espresso powder
- 1 C dark chocolate chips
- 1/3 C sugar
- 1 Tbsp vanilla extract
- 1 pinch salt
- 3 eggs
Directions:
Make the Crust:
- Mix all ingredients together and press into a 9″ pie pan
Make the Filling:
- Preheat oven to 300 degrees
- In a medium saucepan, heat the pan over high heat
- Combine the water and butter and bring to a boil
- Add the espresso powder
- Stir until dissolved
- In a medium bowl, add the chocolate, sugar and vanilla and pour the hot butter mixture over it
- Whisk until the chocolate is melted and the sugar is dissolved – it should be glossy
- Add the eggs and whisk well to combine
- Pour into prepared crust and bake at 300 degrees for 12-15 minutes, or until chocolate is mostly set, but the center jiggles slightly
- Cool for at least 30 minutes
