Ingredients:
For the Pie Crust: (mix all together)
- 1-1/4 C graham cracker crumbs
- 1/2 C sugar
- 1/2 C slivered almonds
- 1/2 C clarified butter (melt 1-1/2 sticks – remove foam)
For the Filling: (mix all together)
- 2 (14 oz each) cans sweetened condensed milk
- 6 egg yolks
- 1/2 C store bought key lime juice
- 1 Tbsp fresh key lime zest
- 3 Tbsp freshly squeezed key lime juice (2 limes)
- 2 tsp vanilla extract
Directions:
- Preheat oven to 325 degrees
- Spray pie pan with non-stick spray
- Mix the pie crust ingredients and press into greased pie pan
- Mix all of the filling ingredients together and pour over pie crust
- Bake 30 minutes, or until set
- Let stand at room temperature for 30 minutes
- Refrigerate until ready to serve
- Cut with knife that has been ran under hot water to prevent sticking and top with whipped cream
