Ingredients:
- 16 oz (1 box) light or golden brown sugar
- 2 C self rising flour
- 1/2 C (1 stick) butter – softened to room temperature (+ more for greasing pan)
- 3 eggs – beaten
- 1 Tbsp vanilla extract
Optional:
- 1 C sweetened flaked coconut
- 2 C pecans – chopped
- 1 C semisweet chocolate chips
Directions:
- Preheat the oven to 350 degrees
- Lightly grease a 13″ x 9″ x 2″ baking pan
- In a large bowl, using an electric mixer, beat together brown sugar, flour and butter
- Add eggs and vanilla – beat until smooth
- If using, fold in coconut, pecans, and/or chocolate chips until well combined
- Spread the batter evenly in the prepared pan and bake for 30-35 minutes, or until a toothpick inserted through the middle comes out clean
- Cool completely in the pan before cutting into squares
