Ingredients:
- 2 lbs potatoes (5 – 6 medium) – peeled and cut into 3/4″ chunks
- 1 C mayonnaise – I always use Best Foods Brand
- 2 Tbsp vinegar
- 1-1/2 tsp salt
- 1 tsp sugar
- 1/4 tsp ground black pepper
- 1/4 C celery – thinly sliced
- 1/4 C onion – finely chopped
- 2 eggs – hard boiled and chopped
- 1 can (5 oz) black olives – sliced
- paprika
Directions:
- In 4 qt sauce pot, cover potatoes with water
- Bring to a boil over medium-high heat
- Reduce heat to low and simmer until potatoes are tender – about 10 minutes
- Drain and cool slightly
- In a large bowl, combine mayonnaise, vinegar, salt, sugar and pepper
- Add potatoes, celery, onion, eggs and black olives – toss gently
- Sprinkle a little paprika on top
