Ingredients:
- 2 english cucumbers (the long skinny ones wrapped in plastic)
- 2 Tbsp garlic-seasoned rice wine vinegar
- 1 Tbsp toasted sesame oil
- 1 Tbsp soy sauce
- 1 tsp sugar
- salt – to taste (I use about 1/2 tsp)
- toasted sesame seeds for garnish
Directions:
- Peel and slice or dice cucumbers
- In a small bowl, whisk rice vinegar, sesame oil, soy sauce and sugar together until sugar is dissolved
- Add cucumber
- Toss gently until well coated
- Season with salt
- Sprinkle with sesame seeds
- Refrigerate until ready to serve

- Do not substitute the cucumbers
