Ingredients:

  • 1 can (15.25 oz) whole kernel white corn – drained 
  • 1 can (14.75 oz) cream style white corn
  • 2 green onions – chopped
  • 2 eggs – beaten
  • 20 Ritz Brand crackers (or any other butter crackers) – crushed
  • 2 Tbsp butter – melted
  • 1 C mild cheddar cheese – shredded
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 C french fried onions – crushed – for topping

Directions:

  1. Preheat oven to 350 degrees
  2. Lightly grease a 13″ x 9″ x 2″ baking dish with non-stick cooking spray
  3. In a bowl, combine both cans of corn, green onions and beaten eggs
  4. Stir in the crackers, butter, cheese, salt and pepper
  5. Pour into a lightly greased baking dish
  6. Bake for 40 minutes
  7. Remove and top with the crushed french fried onions
  8. Return to the oven for 5 – 6 minutes or until onions are lightly browned
