Ingredients:
- 1 can (15.25 oz) whole kernel white corn – drained
- 1 can (14.75 oz) cream style white corn
- 2 green onions – chopped
- 2 eggs – beaten
- 20 Ritz Brand crackers (or any other butter crackers) – crushed
- 2 Tbsp butter – melted
- 1 C mild cheddar cheese – shredded
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 C french fried onions – crushed – for topping
Directions:
- Preheat oven to 350 degrees
- Lightly grease a 13″ x 9″ x 2″ baking dish with non-stick cooking spray
- In a bowl, combine both cans of corn, green onions and beaten eggs
- Stir in the crackers, butter, cheese, salt and pepper
- Pour into a lightly greased baking dish
- Bake for 40 minutes
- Remove and top with the crushed french fried onions
- Return to the oven for 5 – 6 minutes or until onions are lightly browned
