Ingredients:
- 2 C chicken broth
- 1 C long-grain white rice
- 2 Tbsp butter
- 2 medium zucchini – grated (about 2 C)
- 1 C shredded cheddar cheese
- salt and pepper – to taste
Directions:
- In a medium saucepan, add the chicken broth and bring to a boil
- Stir in the rice, cover and reduce heat to low and cook for about 20 minutes or until liquid is absorbed
- Remove from heat
- Add the butter, zucchini and cheese
- Stir and let stand for about 5 minutes
- Add salt and pepper – to taste
