Ingredients:
- 1 lb bag dried pinto beans
- 1 onion – chopped
- 1 lb ground beef
- 1 tsp cumin
- 1 tsp salt
- 1 tsp pepper
Directions:
- Rinse beans then soak in water (enough to cover the beans, plus 1″) for 3 hours
- Boil beans until tender
- Fry the ground beef and onion until browned – drain, reserving 2 Tbsp grease
- Add the cumin, salt & pepper
- Add the beef mixture and reserved grease to the beans – mix well
- On high heat, bring to a boil
- Lower heat to medium-low and allow to simmer/cook for 30 minutes

- When I was a kid, my mom used to make this in a Mexican Clay Pot, until I broke the lid – oops! I love you mom!
