Ingredients:
- 10 carrots
- 1 small onion – chopped
- 1 clove garlic – minced
- 1 stick (1/4 C) + 1 Tbsp butter, softened to room temperature
- 1 egg – beaten
- salt & pepper – to taste
- 2 C Ritz Brand crackers – crushed
- 2 C shredded cheddar cheese – divided
Directions:
- Preheat oven to 375 degrees
- Grease an 9″ square baking dish with non-stick cooking spray
- Clean carrots and cut into large pieces
- Cook carrots in boiling water until soft
- Drain well and mash
- Saute onions & garlic over med-high heat in 1 Tbsp butter until soft
- In large bowl, combine carrots, onion, 1/2 C (1 stick) butter, egg, Ritz crackers and 1 C cheese – mix well
- Place carrot mixture into baking dish and top with remaining 1 cup cheese
- Bake uncovered for 30 minutes until bubbly and edges are slightly browned
