*This is combo crockpot & oven recipe
Ingredients:
- 6 boneless, skinless chicken breasts
- 2 jars salsa – any kind – divided
- 1 C mexican blend cheese – shredded
Directions:
- Place a slow cooker liner bag in your crockpot
- Place whole chicken breasts in your crockpot
- Pour the 1 jar of salsa over chicken
- Cook for 1- 1/2 to 2 hours on high – you don’t want to cook it longer because it will start falling apart
- Preheat oven to 425 degrees
- Spray an 8″ square baking dish with non-stick spray
- Carefully remove the chicken from the crockpot (leaving the liquid)
- Place the chicken in the baking dish
- Pour remaining jar of salsa over the chicken
- Sprinkle evenly with cheese
- Bake for 15 minutes or until it’s nice and golden brown – the sauce and cheese should be bubbling
Notes:
- For easy clean up, I always use a slow cooker liner bag – make sure if you use a slow cooker liner bag, that you buy the specific liner bag that is made for Slow Cookers, DO NOT use anything else or it will melt and ruin your food!
