Ingredients:
- 1-1/2 lbs flank steak – thinly sliced
- 1/4 C cornstarch
- 2 Tbsp olive oil
- 1/2 tsp minced garlic
- 3/4 C soy sauce
- 3/4 C water
- 3/4 C brown sugar
- 1 C grated carrots
- green onions – sliced – for garnish
Directions:
- Place a slow cooker liner bag in your crockpot (*see Notes below)
- Place the flank steak in a Ziploc bag with the cornstarch and toss to coat evenly
- In a large bowl, mix olive oil, garlic, soy sauce, water, brown sugar and carrots until well combined
- Pour sauce into the bottom of the crockpot
- Add the coated flank steak
- Stir to coat the meat in the sauce
- Cover and cook on HIGH for 2 – 3 hours or LOW for 4 – 5 hours – until the steak is cooked throughout and tender
Notes:
- For easy clean up, I always use a slow cooker liner bag – make sure if you use a slow cooker liner bag, that you buy the specific liner bag that is made for Slow Cookers, DO NOT use anything else or it will melt and ruin your food!
- Serve over white rice and garnish with green onions
- This recipe came from my old dear neighbor, Trudy (who is a gun carrying right-wing republican, but I love her anyway – LOL)
