Ingredients:
- 4 boneless, skinless chicken breasts
- 2 eggs
- 1/3 C buttermilk – optional (or just use milk)
- 1-1/2 sleeves Ritz Brand or similar butter crackers – crushed
- 1/2 C (1 stick) butter – cut into pieces
- 1/2 tsp garlic salt
- 1/2 tsp onion powder
- 1/2 tsp pepper
Directions:
- Preheat oven to 375 degrees
- Lightly spray a 7″ x 11″ glass baking dish with non-stick cooking spray
- In a medium sized shallow bowl, crush the crackers
- Add garlic salt, pepper and onion powder to the crackers and mix well
- In a separate medium size shallow bowl, whisk together eggs and buttermilk
- Dip one chicken breast at a time in the egg mixture, coating well, then dredge in the cracker crumbs, coating well on all sides
- Place chicken breasts side-by-side in baking dish
- Top chicken evenly with pieces of butter
- Bake on middle rack of oven for 45 minutes or until chicken is cooked thoroughly
