Ingredients:
- 1 lb boneless, skinless chicken breasts – cut into 1-1/2″ – 2″ cubes
- 1 Tbsp olive oil
- 2 Tbsp butter
- 2 tsp garlic – minced
- salt and pepper
- 1 Tbsp parsley – minced – optional
Directions:
- Heat the olive oil in a large pan over high heat
- Season the cubed chicken breasts with salt and pepper
- Place the chicken in the pan in a single layer
- Cook on high heat for about 5-7 minutes, stirring occasionally, until golden brown
- Reduce heat to medium-medium high
- Add the butter and garlic to the pan
- Cook for 1-2 minutes, stirring to coat the chicken in the sauce – be careful not to burn the butter & garlic
- Sprinkle with parsley, if desired, and serve
