Ingredients:
- 1 C flour
- 1 C cornmeal – I always use Albers brand white cornmeal
- 2/3 C sugar
- 1 tsp salt
- 3-1/2 tsp baking powder
- 1 egg
- 1 C milk
- 1/3 C vegetable oil
Directions:
- Preheat oven to 400 degrees
- Spray a 9″ round cake pan, a 12 ct muffin pan or an 8 ct mini-loaf pan with non-stick cooking spray
- In a large bowl, combine flour, cornmeal, sugar, salt and baking powder
- Stir in egg, milk and oil until well combined
- Pour into greased pan (if using a muffin or mini-loaf pan, fill 2/3 way up)
- Bake for about 20 – 25 minutes for cake pan, about 14 – 16 minutes for muffin pan and about 17 – 18 minutes for the mini-loaf pan – a toothpick inserted to the center should come out clean
- Remove from oven and serve with butter and/or honey
