Ingredients:
- 2 ripe bananas
- 1 C pancake mix
- 1/2 tsp cinnamon
- 3/4 C milk
- oil – for frying
- powdered sugar – for sprinkling on top
Directions:
- Heat oil to 350 degrees
- In a mixing bowl, use a fork to smash the bananas
- Add in pancake mix, cinnamon and milk
- Whisk together until combined
- Drop about 1 Tbsp batter into hot oil
- Cook for about 2-3 minutes until they are golden brown and cooked through the middle
- Sprinkle hot fritters with powdered sugar
