Ingredients:

  • 2 egg whites
  • 1 tsp vanilla extract
  • 1 C sugar
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 C pecan halves
  • 1 C walnuts
  • 1 C almonds

Directions:

  1. Preheat oven to 250 degrees
  2. Coat 2 baking sheets with cooking spray
  3. In a large bowl, beat egg whites and vanilla until frothy
  4. In another large bowl, combine sugar, salt and cinnamon
  5. Add nuts to egg whites
  6. Stir to coat evenly
  7. Remove 1/2 the nuts and toss them in the sugar mixture until well coated
  8. Spread in a single layer on baking sheet
  9. Repeat with remaining nuts
  10. Bake 1 hour, stirring every 15 minutes
  11. Let cool, then store in an airtight container
