Ingredients:

  • 1 unbaked 9″ pie shell
  • 4 eggs
  • 2-1/4 C milk
  • 2/3 C sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • ground nutmeg

Directions:

  1. Preheat oven to 400 degrees
  2. Bake pie shell for 5 minutes (do not prick crust with a fork)
  3. Cool on a wire rack
  4. In a mixing bowl, beat eggs
  5. Add milk, sugar, vanilla & salt – blend well
  6. Pour filling into baked pie shell
  7. Sprinkle with nutmeg (as little or as much as you like)
  8. Bake at 400 degrees for 15 minutes
  9. Reduce oven temperature to 325 degrees
  10. Bake for 35-40 minutes or until a knife inserted one inch from center comes out clean – Do not over bake!
  11. Cool on wire rack
